Stuffed Pepper

protein_box_new 3 oz cooked ground meat.
carb_box ½ cup cooked rice, 1 bell pepper, ¼ cup tomato sauce, and ¼ cup diced peppers.
fat_box 3 Tbsp shredded mozzarella cheese.

1. Boil rice according to the directions on the packaging. Meanwhile, cook the ground meat in a nonstick pan with cooking spray. Season with garlic and onion powder. After the meat and rice are fully cooked, combine both into a bowl, add
¼ cup tomato sauce, ¼ cup diced peppers, 1 tsp of Italian seasoning, and mix well.
2. Remove the top of a pepper, cut in half and discard the seeds. Next, lay the peppers on a baking dish with the hollow sides facing up.
3. Spoon equal amounts of the meat and rice mixture into each of the pepper halves. Sprinkle with part-skim mozzarella cheese and bake for 30 minutes in a preheated oven until the peppers become tender.
